В 1974 году Дембицкий женился на Жаннетте Анатольевне Шнеер. В семье двое детей: сын Дембицкий Ян Валерьевич, экономист, проживает в Москве. Сын Дембицкий Роман Валерьевич, специалист по IT-технологиям, проживает в Иерусалиме. Внук, Григорий Янович Дембицкий, участник чемпионатов Московской Области по бальным танцам.

Публикации

Автор более 300 научных работ по биоорганической химии, химии природных соединений, медицинской химии, органическому синтезу и медицине.
